Summer S'mores

SUMMER
 is just around the corner.
its the start of wonderful nights under the stars with campfires, friends and of course
S'MORES!

The last few years I have missed out on those wonderful yummy summer treats..
The gooey toasted marshmallow melting into the chocolate would almost break my heart...
 I had to pass on them.............
cause I have celiac disease.

until now!!
THANK YOU FOR GLUTEN FREE GRAHAM CRACKERS!

This was the first time I have had a Graham Cracker in about 4 years!
I couldn't wait for a campfire so I went straight for the
 marshmallow creme and nutella,

the nutella was amazing!!
So I had to try it with peanut butter too
perfection!!
I couldn't stop there!!
so I did both peanut butter and nutella!

double YUM!!
I had to keep going!!..
so I brought out my homemade strawberry jam!
WOW!!!

I must say..It was a beautiful night even without the campfire.


Alot of gooey goodness

I cant wait for evenings around the campfire with my s'mores!

Swiss Rolls Gluten-Free



Everyone loves chocolate covered cake especially with a gooey filling inside!

HELLO! AND MEET LITTLE DEBBIE

Swiss Rolls!

but for someone living gluten-free, the word Little Debbie
can hurt their little ears.

I have found something that can bring back the Swiss roll
gluten-free!!!
They might not be made by Little Debbie, or in a roll
but they are AMAZING!


Swiss Rolls GLUTEN-FREE

1 gluten-free Chocolate cake mix -(I use Betty Crocker)
-Mix according to package directions

-Pour into a greased 10x15 jelly roll pan
and bake at 350` for 18-20 minutes.

cool completely

filling-
1 8oz cream cheese (softened)
1 cup powdered sugar
1 cup marshmallow creme
1 8-12 oz cool whip

cream together the first 3 ingredients then add the cool whip- (I use 12oz but 8 oz is fine too)
put on top of the cooled bars and spread

Glaze-
In a small sauce pan melt 1 stick of butter on medium heat
when butter is melted remove from heat and stir in
1 1/2 cup chocolate chips
stir until the chips are completely melted, you may need to return to the heat but only
for a little bit, don't over heat the chocolate!

cool slightly and pour on top of filling!
